Roasted Veggie Quinoa Bowls

One of my favorite dinners to make is a roasted veggie quinoa bowl. I didn’t cook a whole lot of meals while my husband was deployed, but I regularly made these! And that hasn’t stopped now that he’s back. I don’t know if it’s because there’s usually some mad flavor going around – from the roasted veggies – but my boys love them too. Actually I take that back. Ajax loves them. Lately, Brecken basically chooses to only eat air and peanut butter and jelly sandwiches… But the rest of us love these bowls.

I almost always have sweet potatoes on hand, and they’re probably my favorite part of the bowl.  I don’t know that I’d want a roasted veggie quinoa bowl without them. But really you can use whatever veggies you have on hand. Everything from broccoli to peppers, avocados (although I’d recommend not roasting them), onions, squash and zucchini, Brussel sprouts, tomatoes, carrots… I could go on. Really whatever veggies you have on hand.

I cut or slice my veggies and toss with olive oil and salt and roast for about 20 – 25 minutes at 425.
My sweet potatoes I usually sprinkle a little paprika on top too, but I love the taste of paprika. Skip it if you’re not a fan.

And one of my favorite things to add is roasted chick peas! I usually just toss them with a bit of olive oil, salt and a little paprika. They’re SO good I eat most of them before I get even getting the bowls put together.

And if you don’t eat quinoa, you can do rice, brown rice, couscous, or even greens! I prefer quinoa, so that’s what I always use but the best part are the roasted veggies, so it doesn’t really matter what you’re base is, in my opinion. I think roasted veggies are so good, it’s one of only leftovers that I like to eat. I usually make more than I know we need for dinner, just so I can have some for lunch the next day.

I’ve eaten these roasted veggies quinoa bowls dry and with a dressing. Anything that pairs well with your choice of veggies will taste great on top. And while I usually use this as a good #meatlessmonday meal, you can always always add shredded or roasted chicken too. And goat cheese taste exceptionally well in these bowls too.
