EASY GREEK CHICKEN KABOBS

The ONLY thing you need to remember about making this recipe, is that you need some time for the chicken to sit in the marinade! For me, when I know I’m grilling, I try to mix up my marinade around lunch time, so it can have a couple hours in the marinade before cooking. You can also make it up the night before as well. Mazola Corn Oil is a heart-healthy* cooking oil and creates marinades that make great-tasting food because it has a neutral taste that lets the natural flavor of your food stand out.

Greek Marinade for Chicken Kabobs

Ingredients

  • 1/2 c Mazola Corn Oil
  • 2 tbsp fresh-squeezed lemon juice
  • 1 tbsp lemon zest
  • 1 tsp paprika
  • 1/2 c fresh oregano (or dried)
  • 1 c fresh basil
  • 4 cloves of garlic
  • 1 shallot
  • 2 lbs boneless, skinless chicken breast cut into 1'' pieces
  • salt + pepper to taste

Instructions

  1. Blend all ingredients except chicken in a blender or food processor

  2. Mix marinade with cut chicken pieces and put in the refrigerator for at least 2 hours

  3. Soak kabob sticks in water for five minutes

  4. Add 7-10 pieces of chicken on each kabob stick

  5. Cook chicken kabobs on hot grill, turning on all sides until internal temperature of chicken reaches 165°, about 10-15 minutes.

I will almost always choose Greek food – it’s so light and fresh! You could do a lot of things with these Greek chicken kabobs, but or myself and my husband, I used the kabobs to make a delicious salad with a yummy homemade Greek dressing, olives, feta – all the good ingredients! And for my boys, I created a greek platter for them, complete with chicken, nana bread (you could use pita too!), veggies, tazaki.

In terms of a super delicious, light summer meal, this is it! And because of its high smoke point (450˚ F), Mazola® Corn Oil is the perfect choice for marinades for grilling this summer!
