MEXICAN STREET CORN

Ingredients

  • 1/4 c mayonnaise
  • 1/4 c sour cream
  • 1/2 c feta cheese
  • 1 garlic clove, minced
  • 1/4 tsp chili powder
  • 1/4 c cilantro, chopped
  • 8 ears of corn

Instructions

  1. Heat grill.

  2. Combine the mayonnaise, sour cream, feta cheese, minced garlic clove, chili powder and cilantro and set aside. 

  3. Cook ears of corn on the grill, about 8-10 minutes (or until cooked), rotating every couple minutes to char all side of the ears. 

  4. With a spatula or large spoon, lightly cover each ear with the cheese mixture. Sprinkle with chili powder and serve immediately.
